To maintain good health we need certain organic compounds that are called Vitamins; The body needs them but cannot create them. Our diet has to include vitamins from various sources. Vitamins are either water soluble or fat soluble.
Vitamin C for example is water soluble while Vitamins A, D, E and K are fat soluble. While excess water soluble vitamins pass out of the body in Urine, excess fat soluble vitamins remain in the body in fat tissues.
A rule of thumb is to eat colorful foods (naturally colorful). Fresh fruits and vegetables are excellent source of Vitamins. If food is overcooked, Vitamins get compromised.
